Pinterest Project #140 Chocolate Chip Cookies made with Shortening

The only reason I made this recipe is because I am cheap and did not want to buy butter! LOL
It is true..with the price of butter as high as it is right now I started looking for other options.
I came across this recipe on pinterest  and I decided to give it a try.
I am so happy that I made this recipe!! These are actually the best chocolate chip cookies I have ever made!

Pinterest Project #135 Creamy Chicken and Corn Chowder and a New to me Wall Oven and Cook Top

I have not been cooking or baking too much since moving into our new home. The appliances were very old and not in working order.  I have used a microwave, nu wave oven and toaster oven and hot plate for the last 3 1/2 months. It has been challenging and fun at the same time!

Last week while browsing on craigslist I came across a cook top and a wall oven for 160.00 for both! What a deal!
With the help of my husband and our parents we were able to purchase these and have them installed in about 2 days!

Let the cooking and baking begin again!!
I am so happy to have them as I love to cook and bake and with Fall soon approaching;) I will be spending  a lot of time in the kitchen.

This is the first recipe I have tried out on my new cook top!

Creamy Chicken and Corn Chowder...
Delicious with fresh jalapeno peppers from my dads garden!

This one actually has an electric starter! OH My..I don't need a pilot light lit at all times...wonderful! I just Love Love Love it!

Pinterest Project #125 Crock-Pot Honey Mustard Chicken

The recipe calls for using a whole chicken.
I only had boneless chicken breasts and it came out very good but next time I would definitely go for the whole chicken or bone-in thighs/breasts.
The sauce is delicious. Very easy to prepare..Whole grain mustard, honey, olive oil and butter. Set it and forget it.

Pinterest Project #97 Pretzel Crusted Chicken with honey mustard dipping sauce

Oh Wow..I am only 3 away from my 100th Pinterest Project!!

This is a GOOD one..a keeper for sure.
Pretzel crusted chicken. Oh so good.
I made some honey mustard dipping sauce to go along with it
Next time I was thinking to maybe coat the chicken in the honey mustard before the pretzels!

Pinterest Project #71 Chicken Alfredo Casserole

To put it simply...
Scrumptious!
If you are looking for a low fat meal...go away...NOW

I saw this on pinterest..of course and I thought..Yes..I could use a few extra pounds on my hips...
Let me make this NOW
LOL

It was FABULOUS and I enjoyed every bite.

I did change it a little bit in that I sauteed the chicken in garlic and olive oil first...
I also added some fresh broccoli and let it get a bit tender before tossing it all together and baking.
So good...soooo darn good.

Lebanese Chicken or Lemon Lebanese Chicken as my daughter will call it from this day forward

What a delicious change of pace recipe!
This comes from one of my Bon Appétit cookbooks.

3/4 cup fresh lemon juice
8 large garlic cloves, minced
2 tablespoons minced fresh thyme or 2 teaspoons dried *
1 tablespoon paprika
1 1/2 teaspoons ground cumin
3/4 teaspoon cayenne pepper
2 3-pound chickens, split lengthwise, backbones
removed and discarded

     Whisk fresh lemon juice,minced garlic, thyme, paprika, cumin and cayenne pepper in small bowl. Place chicken in 13x9x2-inch glass baking dish. Pour marinade over; turn chicken to coat. Cover and refrigerate at least 6 hours or overnight, turning occasionally.
     Preheat oven to 425 degrees F. Transfer chicken and marinade to large roasting pan. Season chicken with salt and pepper. Bake until chicken is cooked through, basting with pan juices, about 50 minutes.
Transfer chicken to plates. Pass pan juices separately.

4 servings
* I used lemon thyme with this recipe and it was even better!

Pinterest Project #67 Slow Cooker Smothered Chicken with Mushroom Gravy

This recipe was very good.
I did not use my slow cooker..used my dutch oven on the stove top.
I will say my chicken fell apart a bit. The flavor was terrific though.
Next time I will either reduce the cooking time or use boneless chicken and go for it.
It was really good.

Carmelized Chicken Thighs Pinterest Project #39

This chicken dish calls for peanut butter, honey, soy sauce, garlic, sugar and red wine vinegar!
Quite the combination. Turned out absolutely delicious and will be one of my go to dinners.

I used boneless skinless thighs for this recipe and they were perfect but you could really use whatever cut of chicken you wanted to.

I served this with coconut rice and buttered carrots. Really a  nice meal and pretty simple to put together.





 Ingredients:

 3 Pounds chicken thighs
1 cup water
1/2 cup sugar
1/3 cup soy sauce
2 Tbsp. Peanut Butter
1 Tbsp. Honey
1 Tbsp. Minced Garlic
2 tsp. red wine vinegar

Directions:

Pre-heat oven to 350 degrees
In a saucepan mix all ingredients together and cook over medium heat until sugar is dissolved.
Place chicken in deep enough baking dish and pour sauce over.

Cook one hour basting every 15 minutes.

This recipe does not specify if the thighs are bone in or boneless. I used boneless.
