Since Emmeline is quite obsessed with Mickey Mouse my husband decided to make her up a batch of Moo Muffins!
Needless to say she was thrilled and was so excited to help make them and EAT them!
Recipe is adapted from A Rosy Note
2 cups flour
1 tsp. baking soda
1 1/2 tsp. baking powder
1/2 cup granulated sugar
1/4 cup brown sugar
3 tbsp. cocoa powder
1/2 cup butter, softened
2 eggs
1 tsp. vanilla
1/2 cup whole milk yogurt
3 ripe bananas, mashed
1/2 cup white chocolate chips
Mix together flour, baking soda, baking powder and cocoa. In a separate bowl cream together the sugars and butter and add the eggs, vanilla, yogurt and bananas. Beat on low until everything is combined. Add the dry ingredients to the wet and mix well.
Fold in the white chocolate chips.
Line muffin pan with paper muffin cups...or grease and flour. Fill each 3/4 full with batter.
Bake at 350 degrees approx. 18-20 minutes.
Makes 12 muffins.
Next time we will try these with peanut butter chips!
They are very good and very moist.

My 2 year old, a Mickey Mouse Clubhouse fanatic, wants moo muffins and a coconut (?) for dinner, so I'm glad you posted this! PS: no idea why she wants a coconut.
