Knish Cakes Recipe Potato Pancake Caraway Dijon and Sauerkraut Leftover Mashed potatoes!






We had a big turkey dinner the other night and had a good amount of leftover mashed potatoes.
I hate to waste food so I am always trying to come up with new ideas. My husband gets  the credit for this one! He whipped these up tonight and they were really delicious.

We both love sauerkraut and caraway seeds and we usually always mix our sauerkraut with our mashed potatoes when we have a pork roast for dinner.
Well he came up with the idea for making them into little potato pancakes/knish type side dish.


They are really simple to make and a great use for leftover mashed potatoes.

2 cups mashed potatoes
1/2 up sauerkraut more or less depending on your taste
1 tbs Dijon mustard
1 tbs caraway seeds more or less depending on your taste
salt and pepper to taste
bread crumbs or panko to coat and vegetable oil to pan fry in.

We used bread crumbs but I bet panko would be even better.

Mix all the ingredients together and form into pancakes...fry in pan until crisp on each side.
