Well I was in the mood for tacos tonight but had no ground beef. Search Pinterest and came across this recipe. I really enjoyed this. The only thing I did different was add a little more water and warmed it on the stove top and I also added a bit of oil. In the future I would use a bit less walnuts and add regular packet of taco seasoning since that is what I am used to. The texture was great and I really enjoyed it. My husband liked it as well. I have yet to have my child try but she is a big fan of chickpeas so I don't see any issues.
Since it was a pretty gloomy and chilly day for "SPRING" this hit the spot. I changed it up a little and added cilantro for garnish as well as a can of green chilies and jalapeno. A poblano would be wonderful in this soup as well.
