Pinterest Project #96 Eggs baked in Ham cups with Cheese

Oh this is good!
A nice fun weekend breakfast.
These are done in your muffin tin!
I added some shredded sharp cheddar cheese and chive on top of the egg as well.

Italian Rice Balls

I looked at a few different recipes and this is the one I came up with for us that is quick and delicious.







3 cups of cooked rice
2 Eggs
1/2 cup Parmesan Cheese
1/2 cup shredded mozzarella cheese
2-3 Tbs. cream cheese (as much as you need to bind)
1 Tsp. dried basil
1/2 tsp dried oregano
1/2 tsp salt

1 Egg for Breading
Panko Bread Crumbs

Mix together until combined and easily able to form a ball

Dip in egg and water mixture and Roll in panko
Fry until golden brown
Makes about 20 rice balls

Cracking a smile Cake!

This was my moms birthday cake.
It cracked.
I had all good intentions for this cake
It was to be beautifully iced and fluffy with pink sugar crystals all atop the peaks.
Instead...here is my flat faced cracking a smile cake!


Here is the recipe:

Take a boxed cake mix
Let your 3 year old help make it by stirring and adding all the ingredients...
So far so good
Mix Mix Mix
Pour into cake pans
Slam cake pans down to get air bubbles out...
Turn to the timer on your stove
Get distracted while setting it by your 3 year old
Do not set it
Forget how long the cake is supposed to be in the oven
Take it out too early
Let it cool completely...(umm...not so much)
Ice it beautifully and fluffy ( yeah...ok)
Let it Crack
Add googly eyes.

Simple!

Pinterest Project Umm...95 kind of...FAIL

Well I looked at a bunch of recipes for these so called popcorn balls...
I found a cool one that was supposed to look like a pumpkin
yeah..that sounds fun..
They were orange...had a tootsie roll on top...cool..I don't have tootsie rolls..but we can make it work...
Wait..the recipe calls for orange jello? I don't have orange jello either!
Well we can just use food coloring...put it in with the marshmallows...it will be fine....
FINE! I said!
Yeah...it did not work..
I guess you need the orange jello for color because no matter how we tried..we could not make orange!!
And forget the stems...at this point I was over it...
Instead we had some type of pink birthday cake popcorn balls!
My daughter was sitting on the counter..excuse her foot..
This is why I can't sell food..like to the public...

Here is the way it went down....




My daughter loves to cook with me...And I love her to cook with me too!
Lets make Pumpkins! Pumpkin!
This will be so much fun...we can make popcorn and actually mold pumpkins out of them

I would encourage anyone looking for some fun project to do with your little one...do this...  make popcorn balls!!!!!!
I dare you to get them to look like pumpkins!!!!!
I bought tootsie rolls today to try again...I think I might get it next time!


Leftover Loaf Turkey Meatloaf that tastes like Thanksgiving!

I remember making a meatloaf similar to this a few years ago.
This meatloaf is extremely good and tastes like that special sandwich you make after Thanksgiving with the turkey/stuffing/gravy and cranberry sauce!




Ingredients:

2 pounds ground turkey
1 egg
1 Rib Celery diced
1 Cup plain bread crumbs
1.5 cups prepared stuffing ( any kind you prefer)
1/2 cup prepared turkey gravy (any kind you prefer)
1/2 tsp. black pepper
1/2 tsp salt
1/2 tsp dried thyme

Glaze:

1/2 cup cranberry sauce
1 Tablespoon Brown Sugar
1 Tablespoon Ketchup

Mix all ingredients together into a loaf and bake at 375 for approx 1 hour.

Put the glaze on about 20 minutes before loaf is done.

Italian Style Turkey Soup

A quick and easy recipe to make use of your leftover turkey!





1 Onion diced
4 Ribs Celery diced
4 Carrots peeled and diced
2 cloves of garlic peeled and diced
2 Tbsp Olive oil
1 Tsp Oregano
1/2 Tsp Thyme
Pinch red pepper flakes
Salt and Pepper
Parmesan cheese
Diced turkey breast
1/2 cup dry red wine
1 28 ounce can Whole Plum tomatoes
6 cups chicken stock or you can make your own stock with leftover carcass of turkey

Cooked pasta of your choice. Add as much or as little as you like.

Saute onion, celery, carrots and garlic in olive oil until translucent.
Add your salt, pepper, oregano, thyme and red pepper flakes
Add wine and cook until alcohol is evaporated
Add can of tomatoes and break the tomatoes up in the pot
Add your chicken stock and turkey
Bring soup to a boil and let it cook for about 5 minutes
Reduce heat and simmer for approx. one hour. I usually cook mine a bit longer but an hour is all you really need.

Soup is Ready!
 Sprinkle with Parmesan cheese and enjoy.
