Bavarian Red Cabbage

I have been craving red cabbage for a while now...
I have never made it before.
I thought it was only sold in jars in ShopRite?
What?? What??
Delicious served with smothered pork chops or any kind of pork!

It was very very good.
A bit milder than I am used to with a little more sweetness.





1 head red cabbage, shredded
3 T. bacon drippings
1 onion, chopped
salt and freshly ground pepper
1 cup red wine
2 apples, diced
1 T. brown sugar
1 T. vinegar

Saute cabbage in bacon fat, turning frequently until it begins to get limp. Add onion and lightly brown;
cook five minutes. Add seasonings and wine; cook ten minutes longer. Add apples, brown sugar and
vinegar; cover pot and simmer until tender. Serve with pork, pot roast or sauerbraten.
Serves 6 to 8
