Italian Style Turkey Soup

A quick and easy recipe to make use of your leftover turkey!





1 Onion diced
4 Ribs Celery diced
4 Carrots peeled and diced
2 cloves of garlic peeled and diced
2 Tbsp Olive oil
1 Tsp Oregano
1/2 Tsp Thyme
Pinch red pepper flakes
Salt and Pepper
Parmesan cheese
Diced turkey breast
1/2 cup dry red wine
1 28 ounce can Whole Plum tomatoes
6 cups chicken stock or you can make your own stock with leftover carcass of turkey

Cooked pasta of your choice. Add as much or as little as you like.

Saute onion, celery, carrots and garlic in olive oil until translucent.
Add your salt, pepper, oregano, thyme and red pepper flakes
Add wine and cook until alcohol is evaporated
Add can of tomatoes and break the tomatoes up in the pot
Add your chicken stock and turkey
Bring soup to a boil and let it cook for about 5 minutes
Reduce heat and simmer for approx. one hour. I usually cook mine a bit longer but an hour is all you really need.

Soup is Ready!
 Sprinkle with Parmesan cheese and enjoy.
