Spicy Sausage Minestrone Soup

This soup was created because I had no stew meat in the house for beef stew.
I did have some spicy sausage...so I just went with it and came up with a pretty darn good sausage minestrone type soup.
I was really happy with the way it turned out and my family loved it.

1 package hot italian sausage
1 bag dried chick peas
1 can red kindey beans
1 can green beans
1 small can of tomato paste
2 small onions diced
3 cloves garlic minced
2 carrots diced
1 zucchini chopped
1 tbsp oregano
1 tbs salt
1 1/2 tsp. black pepper
4 beef bullion cubes

Cut sausage up into bite size pieces in brown in your soup pot.
Add onion/garlic and carrots and sautee
Add tomato paste and stir to combine. Cook over medium heat until all combined
Add 8 cups of water and 4 bullion cubes to soup pot.
Add chick peas and stir to combine everything.
Bring to a boil for about 10 minutes...turn down the flame and simmer for a good 4 hours.
Add your oregano, salt and pepper.
Add your green beans, kidney beans and zucchini.
Cook over medium heat another 1/2 hour.
